The best wagyu return gift is the cut you will actually cook, in an amount your freezer can hold. A famous brand or an A5 label matters less than that. This guide explains grades, cuts, and brand regions in plain English. It also shows the Japanese words you need to search a portal.

What does “wagyu” mean on a gift page?
Wagyu (和牛) means Japanese cattle breeds. Most wagyu gifts are Japanese Black cattle, written 黒毛和牛 (kuroge wagyu). You will see both words in gift titles.
“Wagyu” on a label is limited to four breeds and crosses between them. These are Japanese Black, Japanese Brown, Japanese Shorthorn, and Japanese Polled. The cattle must be born and raised in Japan. (JETRO)
“Kokusangyu” (国産牛) is different. It means beef from cattle raised in Japan, of any breed. (JETRO) If you want wagyu, check the title for 和牛.
What do A5 and other grades mean?
The grade comes from the Japan Meat Grading Association (日本食肉格付協会). It has two parts: a letter and a number. (JMGA)
- The letter (A, B, or C) shows how much usable meat the carcass yields. A is above standard.
- The number (5 to 1) shows meat quality. Four items are scored: marbling, meat color, firmness and texture, and fat color and quality.
- The lowest of the four scores becomes the number. So a 5 must score top marks on all four.

A5 is not always the best choice. Heavy marbling is rich, so many people eat less of it at once. For everyday meals, A4 or a lean cut is often easier to enjoy.

Sukiyaki and shabu-shabu
Both use thin slices that cook in seconds. “Kiriotoshi” (切り落とし) means offcuts from several parts. It costs less per gram and works well for sukiyaki, gyudon, and stir-fries.

Yakiniku cuts come ready to grill. Many packs include a mix of parts, which suits a family dinner.
Steak
Wagyu steak is rich, so cut portions smaller than a Western steak. Sear it hot and fast, then rest it for a few minutes. Sirloin has more fat, and fillet is leaner.

Which regions are famous for wagyu?
Many regions raise well-known wagyu brands. The table lists some famous names. Which gifts are listed changes often, so search a portal for the brand name before you plan.

Kobe beef is a protected name (geographical indication, GI) registered with the Ministry of Agriculture. The Kobe Beef Marketing and Distribution Promotion Association (神戸肉流通推進協議会) sets the rules. (MAFF)
- It must come from Tajima cattle (但馬牛) raised in Hyogo.
- The carcass must grade A or B, and 4 or higher.
- Marbling must be BMS No. 6 or higher, and the carcass must weigh 499.9 kg or less.

Famous brands often need a higher donation for the same weight. A less famous region can give you more meat for your limit. Compare grams per donation, not only the brand name.

How much should you donate for wagyu?
There is no fixed price. Donation amounts depend on the brand, cut, grade, and weight. Check the weight in grams and compare a few gifts before you choose.

How do you plan delivery and freezer space?
Plan before you donate. A large box of frozen beef can fill a small Japanese freezer.
- Measure your freezer. Check the box size on the gift page if it is listed.
- Choose small packs. Many gifts come in 300 g or 500 g packs, which are easier to thaw.
- Check the delivery date. Some gifts ship within weeks, others take months. The delivery period is shown on each gift page.
- Be home to receive it. Frozen boxes can’t be left at the door. Use the delivery company’s redelivery service if you miss it.
Thaw wagyu slowly in the fridge, not at room temperature. Slow thawing keeps more of the juices in the meat.
Are regular deliveries a good idea?
Yes, if you eat beef often. A regular delivery (teikibin, 定期便) sends wagyu several times over a few months. You get smaller boxes, so your freezer doesn’t fill up at once.

How do the October 2026 rules affect processed meat?
Processed meat, such as hamburg steaks, is affected the most. From October 1, 2026, the maker must certify what share of the product’s value was created in the municipality. The municipality must publish that share for each gift. (MIC)
A processed gift counts as local only if more than half of its value comes from work done in the municipality. The maker must certify this using a standard price-based method. The gift page must also explain the local steps. (MIC Q&A)
Aging (熟成) has a stricter rule. Beef aged in the municipality counts only if the cattle were raised in the same prefecture. (MIC Q&A)
Fresh wagyu raised in the area is less likely to change. Hamburg steaks or prepared beef dishes made from outside beef may disappear.

What mistakes should you avoid?
- Choosing by grade only. A5 is rich. Lean or A4 cuts may suit your meals better.
- Ordering too much at once. Spread donations over the year, or use a regular delivery.
- Ignoring the delivery date. Popular gifts can take months, especially after a December rush.
- Mixing up wagyu and kokusangyu. Check the gift title for 和牛 or 黒毛和牛.
